Fruitcake Cookies
2 ½ cups mixed candied fruit 1 cup raisins ½ cup brandy 2 eggs ½ cup light brown sugar 1/3 cups butter, melted ½ teaspoon baking soda 1 teaspoon cinnamon ½ teaspoon powdered cloves ½ teaspoon vanilla 1 ½ cups flour 1 cup chopped nuts
Soak 2 ¼ cups of the candied fruit and the raisins in brandy for 12 hours. Reserve ¼ cup of fruit. Beat eggs and sugar with a fork. Blend in butter, soda, spices, and vanilla. Gently stir in flour, nuts, and brandied fruit with liquid. Drop rounded teaspoonful on ungreased baking sheet. Press a piece of fruit (reserved) onto each cookie. Bake at 375 degrees for about 15 minutes or until light brown.
